  2. Make ready 8 cup diced pumpkin

Add the pumpkin and sugar and bring gently to the boil, stirring to dissolve the sugar. Pour into sterilized jars and seal. Peel the pumpkin and remove all the seeds and fibres. Slice the flesh into pieces and grate coarsely lengthways, so the strands are as long as possible.
