Cook and stir until the mushrooms have softened and released their liquid. Add to penne along with mascarpone, mozzarella, Parmesan, half the blue cheese and the reserved cooking water. Top with walnuts and remaining cheese. When pancetta is done, add cream and broth. Add chopped mushroom and stir until reduced about half.
