Feel free to use whichever leaves you prefer; you could make the salad with baby spinach, mache, or mizuna. If serving to kids, I use baby spinach and mache, or something sweet rather than bitter. These salads will warm you up and keep you full - you'll hardly notice that you're eating a salad at all.

- Preheat oven to 200C.
- Put the radicchio / chicory into an oven proof dish. Drizzle the oil over the top and make sure the leaves are coated. Especially the radicchio. Season. Roast for 15-20mins.
- For the dressing: mix all the ingredients together in a small dish.
- When the radicchio/ chicory is ready, layer on a plate. Add the pear slices. Crumble some cheese if using on top and sprinkle the walnuts on top too.
- Drizzle the dressing over everything. Sprinkle some parsley on the top and enjoy ๐
