Season the inside and outside of fish with dill, thyme and salt. The trout can be served as they are with your favourite seasonal vegetables, but for an added extra touch, peel away the top layer of skin and grate over fresh horseradish before serving. Bake Trout; Place packets of fish onto a baking sheet. The flesh should pull apart easily with a fork.

Steps to make Baked trout and vegetables:
  1. Heat oven to 180 degrees c
  2. Chop vegetables and place on ovenproof tray. Season with olive oil and salt and pepper (I added s little chilli too)
  3. Clean fish and fill cavity with mixed herbs. Rub with olive oil or butter and seasoning. Wrap in foil.
  4. Place fish on a tray and bake both fish and vegetables in the oven for approx. 30mins. ( depends on size of the fish. Rest for 5 minutes and serve. Note: this dish contains fish bones.

Bake Trout; Place packets of fish onto a baking sheet. The flesh should pull apart easily with a fork. Place each packet on a plate. Carefully open the foil packets — take care not to let the steam burn you. Slide the fish away from the packet and onto the plate and pour juices over it.
