- Make ready 2 tbs olive oil
- Prepare 1 bunch washed spinach
- Prepare 2 tbsp Corn kernels

- Get 1 cup chopped carrots

- Make ready 1/2 cup whole wheat orzo pasta

Instructions to make Orzo Pasta Soup:
- Take oil in a pan
- Add onion and garlic, saute until soft.
- Add carrots, tomatoes, corn, beans and mushrooms saute for sometime but don't over cook.
- Add orzo (pasta), oregano,Rosemary, celery and stir to combine all.
- Add vegetables stock or water and cover it.
- Bring soup to a simmer, stirring occasionally.
- Reduce heat to low flame and simmer for 10 minutes, stirring occasionally, until the pasta is al dente.
- Stir in the spinach and cook for 1-2 minutes so that it doesn't lose it's bright green colour. Season with salt and black pepper.
- Serve hot.
