  1. Prepare 15 ml oil or butter for sautéing
  2. Take 396 grams washed potato peel
  3. Prepare 117 grams washed carrot peel
  4. Get 109 grams washed parsnip peel
  5. Take 1 onion, chopped & peeled or 2 pinches asafoetida if allergic to onions
  6. Take 500 ml Milk I used own homemade Almond milk
  7. Take 1 vegetable cube
  8. Make ready 500 ml water
  9. Take 1/8 tsp sea salt
  10. Get 2 pinch black pepper
  11. Take ground ginger to taste
  12. Take white pepper to taste
  13. Take optional
  14. Get 1 grilled bacon on top when serving
  15. Take 1/4 tsp ground coriander
  16. Take 1 tbsp dried parsley

No need for thickeners in this. You can use any spice at end for flavour. It's sorta like mushroom soup, a tad potato flavour but nice. I like this as I live mushrooms but allergic.

Steps to make Irmgards Appeeling Soup:
  1. Add oil to large pan and sauté onion if using and or asafoetida
  2. Add all peels and sauté until soft, keep stirring around to get oil on.
  3. Remove from the heat and cool a little
  4. Add hot water to jug and mix in stock cube
  5. Add stock from step 4 & milk to peels with salt and pepper
  6. Bring to the boil then reduce the heat and simmer for approximately 10 minutes until peels are tender and soft.
  7. Cool the soup the puree with a stick blender then stir in the parsley, add coriander or own spices now to taste
  8. Serve immediately with crispy bacon pieces or on its own, or put in containers, lid and keep in the fridge.
