Steps to make Cheesy Mushroom Paratha:
  1. Prep for filling:In a pan on med heat,fry the onion with the dry herbs in oil till the onions is soft.Add the sliced mushrooms, pepper powder and salt. Cover for 5mins for the mushrooms to soften then add the chillies and butter, let it cook till it has dried out and leave aside.
  2. Prep of dough: - Sift flour into a bowl, add salt, sugar and yeast. Add oil then water and mix to form a soft dough. Knead for 5 mins and cover the bowl. Leave to rise for an hour. Separate the dough into 4 parts.
  3. Roll all 4 on a floured surface into circles.Add half Tbs of pasta sauce on each circle and spread all over. Add the mushroom filling in the middle of each paratha.
  4. Top off with grated cheese  and close by folding inwards.Roll them out again into a circle.
  5. Melt the butter with the oil for frying.Cook the paratha on a hot thawa spreading butter and oil mixture on both sides. Cook till brown on both sides.Serve with your choice of dip or on it's own.MAKES 4
