  2. Prepare 1 cup sugar

  1. Cream butter with sugar, add eggs, oil, vanilla and beat well.
  2. Sift in flour and baking powder. Mix till a soft dough. If it's too sticky add little more flour.
  3. Seperate the dough into 2 parts. Press one half into a greased tray, spread jam evenly.Sprinkle the coconut all over.
  4. Grate rest of the dough over covering the jam and bake at 180°c for 20/25mins or till golden.Allow to cool then dust with icing sugar and cut into squares. Enjoy!
