  2. Place the potatoes on a tray to cool off and then place in the freezer for an hour max
  3. Heat a pot for deep frying.
  4. Fry the chips until you see a light crust form. Then remove from oil and drain.
  5. Repeat the process again by placing on a tray and freezing
  6. Deep fry until golden brown. Then remove from oil and drain. Season in any way you desire (I prefer just salt and vinegar)

Put some cold tap water into a large saucepan and add your potatoes. Next, remove the chips from the saucepan and place on a cooling rack to dry out. Dry thoroughly on kitchen paper and leave to cool. Fry for ten minutes, or until cooked through but not browned. Remove the chips from the pan.
