The ingredients needed to make Fruit Loaf:
- Take 12 oz Dried fruit (mixed fruit or any dried fruit & citrus peel)
- Get 1/4 pint boiling water
- Get 1 tsp orange essence
- Get 1 large egg
- Make ready 2 oz Demerara Sugar plus a sprinkling
- Take 6 oz Self Raising Flour
I do use greaseproof paper to line my tin. Mix flour and salt, rub in margarine. Add egg and flour to dried fruit mixture; mix well and turn into prepared tin. Pour the fruit loaf batter into your prepared loaf tin.
Instructions to make Fruit Loaf:
- Put fruit(&peel) in large mixing bowl. Pour on boiling water and add orange essence. Mix through. Leave to soak minimum 30mins upto 2 hours.
- Preheat oven 160°fan. Line 2lb loaf tin. I use liners, saves time.
- Add sugar and beaten egg to fruit. Mix through. Add flour, mix through. Add to tin and level top. Sprinkle with Demerara sugar. Cook for 50mins. Test with skewer should come out clean.
- Leave in tin for about 10mins. I leave the liner on the loaf. When cool wrap in foil. Will keep for about a week. Good as it is or with butter.
Add egg and flour to dried fruit mixture; mix well and turn into prepared tin. Pour the fruit loaf batter into your prepared loaf tin. It's ready when a metal skewer, sharp knife or toothpick inserted into the middle comes out clean. If it starts to brown on top too much before it's fully baked, cover it the top with some tin foil. Serve cut in slices and buttered.
