- Wash the Apple thoroughly, I'm using red apple preferred green apples.
- Cut the apples in 4 sections. And take whatever you can from the core too.
- Cut each sideways so the are long slices, turn them around and dice them up. To same to each piece.
- Wash the coriander and peel the garlic and wash it too.
- Next cut the garlic by dicing them. So there are not big chunks, but small blocks. And cut the coriander leaves.
- Add in 1 teaspoon of chilli powder. (it is down to your taste)
- Add 1 teaspoon of salt. (again it is down to your taste) It's to give it that sour chutney flavour.
- Mix it all up with the apples. Finally you should be left with…..
For a quick dinner, I love serving it alongside rotisserie chicken or sliced pork tenderloin. The vinegar and sugar will act as a preservative, keeping the chutney fresh for several weeks. While your apple chutney is cooking you can prepare your storage jars. Wash your glass jars and lids in hot soapy water and rinse well. Allow to air dry upside down on a clean tea towel.
