Start by peeling the mangoes, removing their seeds before cutting them into small cubes and placing them in a jam Bowl (which allows for a good heat distribution) or a large pot. Combine mango and juice in large saucepan; bring to the boil. Measure fruit mixture; allow ¾ cup sugar for each cup of fruit mixture. Return fruit mixture and sugar to pan; stir over high heat, without boiling, until sugar dissolves.

  1. Peel The ripe mangoes and dice into 1.5 x 1.5cm cubes. Measure for 500g.
  2. Put the mango cubes into the pot, add passion fruit and mix together.
  3. Use low heat for a few minutes, then add half of sugar, stir to dissolve sugar. Now change to medium heat until the mixture is slightly boiled, add the rest of sugar, stir well.
  4. Boil in medium heat for about 30-40 minute (stir it sometimes) until the mango is softened and shiny, it should be reduced and a bit thickened.
  5. Skim the foam on the surface of jam. After that make more consistent by adding pectin into the jam mixture, stir well until it's completely dissolved, continue simmering more 10 minutes or until you get the right consistency. (Check consistency by having a little jam on the spoon and put it in freezer for a few minutes)
  6. Sterilized the jam bottle by boiling it for at least 15 minutes, put the jam into the bottle while everything is still hot, after that bring the jam bottle to the boiling water again for 10-15 minutes to complete sterilization.
  7. Let the jam bottles completely cool before keep in the refrigerator.
  8. You can enjoy Sweet and sour Mango Passion fruit jam with the toast or buttery delicious scones ^_^ (It also goes well with fresh natural flavor yoghurt)
