The ingredients needed to make Spaghetti Carbonara:
  1. Prepare 200 g spaghetti
  2. Prepare 70 g bacon
  3. Take 2 medium-sized egg yolks
  4. Take 60 g Pecorino
  5. Get Olive Oil

Place the frying pan with the pancetta in back over a medium-low heat. Add the drained spaghetti and egg. Return cooked pancetta to pan; add cooked and drained spaghetti. Toss to coat and heat through, adding more olive oil if it seems dry or is sticking together.

Instructions to make Spaghetti Carbonara:

  2. Mix egg yolks, pecorino, salt and pepper in a bowl
  3. Stir fry bacon until fat is nicely rendered and bacon becomes slightly crispy.

  5. Get tongs and add the pasta to the pan with the bacon. Make sure the heat under the pan is turned off. Mix bacon, fat and pasta
  6. Add egg mix to the pan and keep tossing the pasta until you get a nice and creamy sauce. Make sure the egg does not curdle.
  7. Garnish with some pecorino and serve.

Return cooked pancetta to pan; add cooked and drained spaghetti. Toss to coat and heat through, adding more olive oil if it seems dry or is sticking together. Add beaten eggs and cook, tossing constantly with tongs or large fork until eggs are barely set. Beat together the eggs, cream, most of the Parmesan and plenty of ground black pepper. Remove a cupful of pasta-cooking water and then drain the spaghetti and tip it into the pancetta pan.
