  1. Pour boiling water in a large saucepan and add the linguine. Simmer for 12 minutes till cooked.
  2. Meanwhile add both the grated pecorino and grated Parmesan to a bowl and stir together.
  3. In another bowl add the egg and whisk. Season with freshly ground black pepper and 75% of the cheese mixture and stir.
  4. Add the butter to a frying pan on a medium heat and let melt. Bruise the garlic (squish it with a knife) and add to the frying pan with the pancetta. Fry the pancetta till crispy and golden.
  5. Remove the garlic from the frying pan and discard (it will give a lovely flavour to the pancetta).
  6. When the linguine is cooked add it to the frying pan with 6 tablespoons of the pasta water. Remove from the heat and add the egg and cheese mixture and stir well to combine all. The heat from the pasta will cook the egg and the mixture with thicken (it will look like thick cream). Add a little more pasta water to loosen if required.
  7. Serve immediately with the remaining cheese sprinkled on top. ENJOY!!
