  2. Then add vermecilli, roast it in ghee on medium flame till its golden in colour. Roast lil extra for its almond colour. Keep stirring it so that it doesnt burn. Please do not leave the flame on high! Keep folding gently
  3. Once it changes color and roasted properly add sugar and mix gently. Pour boiled water to cover the seviyan and bring to boil, see if you need lil more water, pour & lower the flame and cover, let it cook, check after 5-10 mins. I taste at this stage to see sugar. Add lil more if you need to.
  4. Seviyan should be soft by now. If not add lil more boiled water and cover again. Take the lid off in 5-7 mins, mix it to see if all water is soaked, if not keep on medium flame for water to evaporate.
  5. Garnish with almonds and serve
