  2. Prepare 3 Tbsp ghee (clarified butter)

  4. Take 800 ml (26 fl oz) / 31/4 cups) water, mixed with 4 Tbsp fresh milk

  15. Prepare Garnishing (Optional) A handful of roasted cashew nuts
  16. Take 1 handful cranberries
  17. Get 1 Tbsp crisp-fried shallots
  18. Get 1 handful coriander leaves
  19. Get Colouring (Optional)
  20. Prepare 1 pinch orange food colouring powder
  21. Make ready 1 pinch yellow food colouring powder
  22. Get 2 tsp water

Instructions to make Ghee Rice:
  1. Rinse the rice and drain. Set aside.
  2. Pound the ingredients for the spice paste coarsely using a mortar and pestle. Set aside. Heat the ghee in a heavy-bottom pan over medium heat.   4. At this point, you can add some colour to the rice, if desired. Mix the orange and yellow food colouring powders separately with 1 tsp water. Sprinkle over the cooked rice and let it sit until you are ready to serve.
  5. Stir the rice to mix the coloured grains.
  6. Dish out and garnish with cashew nuts, cranberries, - crisp-fried shallots and/or chopped coriander leaves. Serve hot.
