The ingredients needed to make Aloo Paratha:
  1. Take 1.5 Cups Atta
  2. Get 3 Boiled Aloo
  3. Prepare 1 Onion
  4. Make ready 2 Green Chillies
  5. Prepare 1 inch Ginger
  6. Take 1 Cup Water
  7. Make ready 1 Tablespoon Desi Ghee
  8. Get 1/4 Teaspoon Ajwain
  9. Take Some Dhaniya leaves
  10. Get For Spices-
  11. Prepare 3/4 Teaspoon Amchoor Powder
  12. Prepare 1.5 Teaspoon Salt
  13. Get 1 Teaspoon Dhaniya Powder
  14. Take 1 Teaspoon Laal Mirch Powder

Of all the stuffed breads India is famous for, Aloo Paratha is the one loved in every family kitchen. 'aloo' is the hindi word for potatoes and 'paratha' means an unleavened stuffed flatbread. So aloo paratha literally means potato-stuffed flatbreads or flatbreads stuffed with potatoes. Though there are many variations of stuffed paratha, many folks like aloo ke parathe. In my home, gobi paratha and aloo paratha are winners all the time.

Instructions to make Aloo Paratha:
  1. Take a bowl, add 1.5 Cup Atta in it with 1 Cup water & make a medium-hard dough by mixing water with Atta properly.
  2. While rubbing it should be very thick/ hard, but keep rubbing it & in the end dough will become more stretchable.
  3. Then apply 1 Tablespoon Desi Ghee on dough, cover it with a damp cloth & let it rest for 15-20 minutes.
  4. Chop Onion, Ginger & Dhaniya Leaves finely.
  5. Take a bowl, add 3 Boiled Aloo in it & mash them properly.
  6. Then add spices mix in it & mix them properly.
  7. Take some dry Atta in a plate for coating.
  8. Now after 15-20 minutes, make equal size peda/ balls from the dough.
  9. Now take a peda, press it from between & make it in a shape of katori.
  10. Then fill the aloo stuffing in it & close the peda.
  11. Now with the help of dry Atta, press the peda as long as you want.
  12. Then with the help of rolling pin, start pressing it from bottom left size taking it to the upper right side & then bottom right side.
  13. By doing this process, paratha will not tear while cooking.
  14. Now take a tawa, keep it on medium flame & don’t apply ghee or oil on it at this point.
  15. When tawa get heated up, dry roast paratha on both sides for 1-2 minutes on each side.
  16. Then apply ghee or oil on it & cook them till it starts swelling.
  17. Cook them properly on both sides by pressing them.
  18. Your Aloo Paratha is ready to be served.

Though there are many variations of stuffed paratha, many folks like aloo ke parathe. In my home, gobi paratha and aloo paratha are winners all the time. Aloo paratha is a whole wheat flatbread which is stuffed with spicy mashed potatoes. It's usually enjoyed with butter, yogurt or pickle. My aloo paratha is nothing fancy, it's a basic simple recipe which is made in every household in India.
