- In a 4 quart pot, bring wine, juice and sugar to a boil. Then lower heat to a simmer. Add spices and zest.
- Meanwhile, peel pears but leave stem. Slice small portion from bottom so pears can stand on their own.
- Stand pears in wine. Cover. Simmer for about 30 mins but please be sure not to overcook pears. You want them to remain standing.
- Once pears are done, remove pears from pot and chill in fridge for 2 hours.
- Turn heat back up to make syrup. No more than 15 minutes. Remove from heat and place in fridge.
- Remove pears and syrup from fridge and serve.
Keep your liquid boiling on low, so the pears are simmering as they cook. You don't want them to fall apart in the water. Place into dish and cover with lemonade or ginger ale. Halve the vanilla pod lengthways, scrape out the black seeds and put in a large saucepan with the wine, sugar, cinnamon and thyme. Cut each piece of pod into three long thin strips, add to pan, then lower in the pears.
