- Reserve 1 cup of milk and add rest of the milk to heavy bottom pan with sugar.
- Place pan on medium heat,stir constantly until sugar is full dissolved.
- In another bowl add 1cup reserved milk and stir in cornflour.
- Stir well until cornflour has dissolved,batter should be smooth and lump free.
- As soon as milk comes to boil,lower the heat and add in the cornflour mix and rose water.(Before adding cornflour stir it well once again)
- After adding cornflour mixture stir continuously for 5minutes(use whisk to stir the milk)or until mixture is thick and smooth.
- Turn of the gas and let the mixture cool at room temperature for 10-15 minutes.
- Pour the mixture into wine glasses or in any serving bowls.
- Cover with cling wrap and place in fridge for 4-5 hrs.Mixture should set like a jelly.
- Garnish the malabi by pouring some strawberry coulis and pistachios.
- Steps for preparing strawberry coulis:-
- Wash,hulled and thickly sliced the strawberries.
- In a pan, add sliced strawberries, sugar and fresh lemon juice.
- Place over medium heat and bring the mixture to a boil, stirring occasionally.
- When strawberries start releasing juice,lower the flame and allow to simmer for 20 minutes stir occasionally or until sauce is thickend.
- Remove from heat and cool to room temperature.
- When mixture turns slightly cool,puree the mixture until smooth.
- Strain the mixture using strainer.Smooth and delicious strawberry coulis is ready to serve.
