Sabudana Vada is a popular Snack made from Sago pearls mixed with peanuts, Potatoes and added spices for fl. Sabudana Tikki or Javarisi cutlets are the best tea time snack. Sabudana alias sago or Javvarisi always raises my eyebrows for its adorable cute spherical, pearl-like shape. Actually, it is made from the tapioca root extract.
Steps to make Sago Pearl Tikki:
- Wash and Soak sago for 4 hours in Water. Sieve and add in a mixing bowl. Peel 2 Boiled potatoes. Mash potatoes with sago thorougly.
- Coarsely grind peanuts and mix in potato sago mixture.
- Add chopped coriander leaves, green chilli rock salt, black pepper and cumin seeds and mix well.
- Divide the mixture in 4 parts and make balls and flatten it on your palm and make tikki.
- Heat a griddle. Pour ghee. Now shallow fry tikkis for 2-3 minutes till golden. Flip the side and fry from other side also till golden brown. Like wise make all the tikkis.
- For making instant chutney: Boil mango powder with water Add all the dry masale for making chutney and boil again for 2 minutes. Switch off the flame and let it cool.
- This instant chutney can be stored for a month in refrigerator.
- Serve sago tikki with this instant chutney.
