Fold edge of crust over pears, pressing gently to seal (crust will not cover pears in center). Line a baking sheet with parchment paper. In a small bowl, combine the sugar, cinnamon, cardamom, nutmeg, ginger, and cloves. Dot the top of the galette with cubes of butter, then mix together the sugar and cinnamon, and sprinkle it over the top.

  4. Slice Pear as thinly as possible and toss with mixed sugar, cinnamon and nutmeg
  5. Lay out the pear mixture on the pastry base leaving approx 5 cm gap around the edge
  6. Fold the edge of the pastry up around the pear filling, sprinkle reserved raw sugar over the edge of the pastry
  7. Place in pre-heated oven approx 170 degrees and bake for 40 mins or until pastry is golden brown.
  8. Serve!
