Toast the desiccated coconut until golden brown and set to the side. Add more water if you want a thinner sauce. Thinly slice your spring onions and roughly chop your peanuts. You can use leftover peanut sauce as well.

- Take a pan and add oil 3tbsp.Add finely chopped ginger and let it fry for 1min
- Add tomatoes,peanuts, coriander powder,chilli powder and let if fry for 2-3 mins
- In the mean time cut the egg into medium pieces and add it to peanuts mixture
- Add salt,sugar and mix well
- Keep it in low flame and add the rice gradually and mix well
- Serve hot with cucumber raita and ejoy IPL with your family
Thinly slice your spring onions and roughly chop your peanuts. You can use leftover peanut sauce as well. Add the soya beans and cooked rice and continue stir-frying for a further minute. Remove from the heat and stir in the green parts of the spring onions, the soy sauce and the sesame oil. Transfer to a serving bowl and scatter over the peanuts.
