- Get 2 cup Idly rice
- Prepare 1/4 cup Raw rice
- Prepare 1/2 cup Urad dal
- Get 1/2 tsp Methi seeds
- Take For Kara Chutney:
- Get 2 sliced onion
- Make ready 1 tomato chopped
- Get 1 handful Mint & Coriander leaves
- Take Little tamarind
- Make ready 5 red chili
- Get 2 tsp urad dal
- Get 2 tsp chana dal
- Make ready 1 tsp cumin seeds
- Take 2 garlic clove
- Prepare 2 tsp oil
- Get Salt as per taste
- Take For Uthappam:
- Make ready 1/2 cup grated carrot
- Get 1 finely chopped onion & tomato
- Make ready 3 chopped green chili
- Get leaves Finely chopped curry leaves,coriander
- Take For Chutney tempering:
- Get 2 tbsp oil
- Make ready 1/2 tsp mustard seeds
- Take 1 tsp urad dal
- Make ready leaves Few curry
- Take 1/4 tsp asoefitida
Kara chutney is a spicy chutney made with pearl onions (shallots), tomatoes, spices & herbs from the Tamil Add this chutney mixed water to the bowl and mix very well. I share vegetarian recipes from India & around the World. Delicious onion chutney dosa which taste super delicious and so flavourful. A tasty variation of uttapam made with spiced potato masala, onions, tomatoes and spices with podi is an added advantage.
Steps to make Mixed Veg Uthappam with Kara Chutney:
- For the Utappam batter, soak all the ingredients over night/ 6 hrs. Then, Grind it in a grinder to smooth batter. Add salt and ferment it for 8 hrs or overnight.
- For chutney: Dry roast dal,red chili,cumin seeds and set aside. In the same pan, add 1 tbsp oil, onion, tomato, tamarind,2 garlic clove,salt and saute until it turns mushy. Then add the coriander, mint leaves, switch off the stove & close the lid. Let it cool down for 10 mins.
- Once it is cooled down completely, grind it to smooth paste using Mixie(Dont add more water). Transfer the chutney into a bowl. In a tadka pan,add 2 tbsp oil, all tempering ingredients and let it splutter well. Then add tempering into the chutney and mix well.
- Cut all the veggies required for Uthappam and set aside.
- For Uthappam, mix the fermented batter well. On a hot tawa, add 1 ladle full of batter and press it gently to thick dosa.(Dont make it thin like dosa) Uthappams should be thick.
- After a minute, sprinkle the veggie mixture all over the dosa. Be generous in adding onions for the uthappam to taste great. Gently press it with the dosa ladle or spatula. - Drizzle some ghee on sides, add some Idly podi(Optional). Once it is cooked on 1 side, flip it gently to other side and cook it on low flame for 1 min.
- Repeat the same for the remaining batter. Enjoy the tasty Veg Uthappam with spicy Kara chutney.
