In a deep bowl combine onion, tomato, green chilly, chaat masala with the peanuts. Add coriander leaves with chilly powder and add required salt. Add lemon juice and drizzle oil for glazing and toss well. :- Serve immediately alone or on top of broken pappads. When everything is cool, grind sesame seeds, dry chillies, coconut into a fine powder and finally grind peanuts coarsely.

- Wash and soak rice in water for fifteen minutes. To make masala peanuts, add oil to a pan. Add peanuts to it and roast it till it changes a colour. Sprinkle salt, chilli powder and turmeric powder on top and mix it.
- In a kadhai add ghee and keep it on flame. Add mustard seeds, hing. After seeds crackled, add peanuts and udad daal and roast it. Now add chopped cabbage, capsicum, tomatoes, spring onion, peas and saute it.
- Add water and let it boil. After water starts boiling, add rice. Mix it and add salt, red chilli powder, turmeric powder and dhaniya powder and let it cook.
- After rice is cooked properly, switched off the flame and sprinkle some fresh coriander on top. While serving, topped it with masala peanuts. Your tomato rice with masala peanuts is ready to serve.
