"Char siu" literally means "fork roast" - "char" being "fork" (both noun and verb) and "siu" being "roast" - after the traditional cooking method for the dish: long strips of seasoned boneless pork are skewered with long forks and placed in a covered oven or over a fire. Char Siu, or Chinese BBQ pork, is one of the most popular pork recipes in Cantonese cooking. If you have been to Chinatown, I am sure you have seen glistening and perfectly roasted meats such as Chinese roast pork (siu yuk), chicken and duck hanging in front of the Chinese BBQ restaurants. BBQ pork belly char siu is the epitome of Cantonese BBQ.
Char Sui is one of the most popular of recent trending foods in the world. It’s easy, it’s fast, it tastes delicious. It’s enjoyed by millions daily. They are fine and they look fantastic. Char Sui is something that I have loved my entire life.

The ingredients needed to make Char Sui:
- Prepare 1 slab of pork picnic/shoulder (ask butcher to cut in half)
- Get 2 cloves garlic
- Prepare 1 tablespoon hoisin sauce
- Take 1 tablespoon oyster sauce
- Make ready 1.5 tablespoons soya sauce
- Get 1 tablespoon mushroom soya sauce
- Get 1 tablespoon maple syrup
- Make ready 2 tablespoons rice vinegar
- Get 1 cube fermented tofu
- Take 1/4 cup honey

A good Char Siu should have a glossy surface with the trademark dark mahogany color. Remove the Char Siu from the ziplock bag. Arrange the Char Siu on a wire rack.
Instructions to make Char Sui:
- Finely dice garlic, add hoisin sauce, soya sauce, mushroom soya sauce, maple syrup, rice vinegar, fermented tofu and mix in bowl. Place meat in large zip lock bag and add sauce mixture. Leave meat to marinate in the fridge overnight.
- Preheat oven to 425 deg F
- Add water to bottom of pan to keep meat moist when baking. Do not let water exceed surface of rack.
- Place meat on rack in pan and bake for 1 hr, turning halfway.
- When meat is almost done, put honey in pot and let it boil for a few min to carmelize
- Remove meat from oven and base with carmelized honey. Bake for a few min on broil. Flip and repeat on other side.
- Let meat cool for at least half hour before cutting. Slice meat to desired size.
- Serve with rice and vegetables, in noodle soups or in rice wraps. Also tastes great in fried rice.
Remove the Char Siu from the ziplock bag. Arrange the Char Siu on a wire rack. Mix two parts of maltose with one part of the marinade to form the basting sauce. The quality should be sufficient to baste the Char Siu at least three times. After twenty minutes of baking, remove the bbq pork from the oven and baste with.
