  1. Prepare 1 cup urad dal
  2. Get 2 cup idli rice
  3. Get 1 tsp salt
  4. Take as needed oil to grease

I have always had a strong relationship with my breakfast. Growing up my mother served us a proper Indian breakfast with idlis, dosas, paniyaram, upma (which btw I never approved of), avalakki or poha and parathas on the menu. Steps to make Idli with sambhar and chutney:
  1. Firstly, in a large bowl soak 1 cup urad dal for 4 hours, - drain off the water and transfer to blender or grinder.
  2. Blend to smooth and fluffy batter adding water as required,transfer the batter to a large bowl. keep aside.
  3. Now in another bowl take 2 cup idli rice,rinse the idli rice with enough water and drain off the water
  4. Repeat this for 2 or 3 times or till water runs clean.
  5. Squeeze off water from idli rice and add to urad dal batter.
  6. Mix well making sure rice and urad dal are combined well.
  7. Now cover and rest in warm place for 8-10 hours or till the batter ferments and doubles.
  8. After 8 hours, batter doubles indicating well fermented with air pockets present, - add 1 tsp salt to the batter and mix gently without disturbing the air pockets
  9. Scoop the batter into idli plate greased with oil,place in steamer and steam for 10 minutes on medium flame or till a toothpick inserted comes out clean.

Idli Sambar Chutney Classic southie breakfast ready in an hour. Best served with filter coffee and morning newspapers. A common practice is to eat idlis with coconut chutney. However, having them with the traditional South Indian sambar gives a special experience to the food lovers. Some people prefer having it with both chutney and sambar.
