Heat the oil in a broad non-stick pan and add the cumin seeds. Spread the cauliflower mixture over one paratha, then place another paratha on top and press to seal the edges together. Heat a heavy frying pan or tava over medium heat. Place a paratha in the pan for one minute, then add a teaspoon of butter or oil to the pan so that the paratha swells.

Grated cauliflower with coriander and ajwain seeds along with handful of chopped coriander leaves, gives a wonderful flavour to the filling. Stuff the yummy gobi filling inside roti and make wonderful paratha. Method Add the grated cauliflower, cheese, ginger chilli paste, lemon juice, psyllium husk, salt in a bowl & knead it well into a soft dough. Now make thick balls of the dough & pat it into a Paratha or like a thick patty as shown in the video.

Steps to make Cauliflower Paratha:
  1. Let’s take the wheat flour, add salt, knead with the water and make a medium soft dough. Apply some oil on it and keep it aside for 10 mins.
  2. Now grate the cauliflower first to prepare the stuffing and then let’s take oil in a pan. When oil is hot, add cumin seeds and when it crackles then add grated ginger, grated cauliflower and sauté for 3 mins. Now add turmeric powder, red chilli powder, coriander powder, cumin powder, garam masala, dry mango powder, salt and mix well. Sauté on medium flame then add chopped coriander, mix it well again. Now the Paratha stuffing is ready and keep it aside.
  3. Now take a ball size dough, dust some wheat flour and roll it little thick and place the cauliflower stuffing in the centre and start pleating, press it slightly and roll it gently. Now place it on hot pan, flip it once and roast it with the oil apply on both side. Now the paratha is ready and you can serve it with the butter on top of it if you want along with the curd and pickle.

Method Add the grated cauliflower, cheese, ginger chilli paste, lemon juice, psyllium husk, salt in a bowl & knead it well into a soft dough. Now make thick balls of the dough & pat it into a Paratha or like a thick patty as shown in the video. Heat a non-stick pan, add the Cauliflower Paratha & let it cook well on both sides. Sprinkle some salt over grated cauliflower and cabbage. Add all other ingredients and mix well, except oil.
