- Prepare 2 cup cake flour
- Take 3 large eggs, beaten

- Add eggs to flour and mix until it forms a stiff dough (I use my Kenwood mixer with dough attachment). Add little bit of water if all flour is not absorbed
- Knead dough on a floured surface (again I just continue in my Kenwood) ☆Knead for 5 minutes. The dough should me smooth and elastic. The dough should bounce back when you press your finger in the middle
- Rest dough at room temperature for 30 minutes
- Divide dough into four pieces. Roll dough with rolling pin or pasta machine until desired thickness
- Cut dough in desired shape (I made Tagliatelle)
- Cook for 5 minutes in simmer salted water or hang to dry to use later. Use within 4 days
Consistently great and easy pasta dough. This makes really great homemade linguine or ravioli for a manual pasta machine. If its too sticky, just roll a bit in flour. Preferably make the pasta by hand - especially if you are making a relatively small quantity like this, which will be difficult for a food processor to mix well. Sift the flour into a clean bowl, then turn it out into a mound on a clean surface and make a well in the middle.
