Remove from the heat, add the lemon juice and stir in the sugar until it dissolves. Put the passion fruit pulp and seeds and the remaining water in a food. Purée the mangoes in a food processor with the cooled sugar syrup until smooth, then push through a fine sieve. Halve the passion fruit and scoop the pulp into a sieve set over a small bowl. Pour the fruit mixture into the ice cream machine and churn until it is the right consistency.
