Meanwhile, melt butter in a frying pan and toss garlic with chilli until garlic is fragrant. Crush the two cloves of fresh garlic (or one clove of regular garlic) and let it fry in the butter for just one minute, then add in the prawns, the prosecco and turn the heat up. Let it bubble for a couple of minutes, while the alcohol in the prosecco evaporates, then add the cream and one tablespoon of parsley to the pan. Return the pan to the stove and add in the shallots and stir to scrape up any browned bits on the bottom of the pan.

  1. Cook pasta according to instructions in salted water. Fry garlic and chilli gently in oil. Turn up the heat a little and add prawns then prosecco. Let it evaporate.
  2. Add a ladle of pasta cooking water and passata. Stir and cook for about 3-4 mins on medium
  3. Drain pasta, add to prawns. Mix well and serve immediately with fresh parsley and a drizzle of olive oil. Enjoy :)
