- Take 4 Onion (Roughly Chopped)
- Make ready 6-7 Tablespoon Water

- Prepare 1 teaspoon cumin seeds whole
- Prepare 1/2 teaspoon Fenugreek seeds
- Make ready 1 teaspoon Fennel seeds whole
- Take 4 Red chili (dry) remove it's seeds after roasting
You know those sliced onions that are served in a red sauce with papadums before the meal at Indian restaurants? Onion Chutney recipe comes to rescue when there is no tomato or coconut in stock. My mom makes often, MIL too makes the same way. Very simple yet spicy and flavourful.
Instructions to make Onion Chutney:
- First take a Kadhai and place it on the gas. Turn on the flame then add Oil. When it starts smoke 🔥 then add garlic and saute it for few seconds, then add Chopped Onions. Saute it till it's turn it colour to translucent.
- Then add tamarind to it and saute it for 1 mins. Then add little water 💦 to it.
- Now place another kadhai and roast all dry masala like Coriander seeds, cumin seeds, Fennel seeds. After roasting all at last add red chilli and roast it for few seconds and turn off the flame.
- Wait the masala to cool it completely. Now take a mixi jar and grind all cooked masala and dry masala and add salt to it and grind it properly to make a smooth paste.
- Tempering: take a Kadhai add oil. When oil start smoking then add panch furan, urad dal, curry leaves. Wait for it to cracks. Then add kashmiri red chilli powder. Then add all grinded masala to it, add little more water to it and cook it in Medium flame for 5 mins. Till it's all water 💦 evaporate.
- Cool it completely and serve. You can store it also.
