Fry the vegetables and potatoes in a pan with the oil for a few minutes until beginning to soften. Pour in the vegetable stock and add the rest of the vegetables. Bring to the boil and then reduce to simmer. Check the soup every few minutes. Pour over the vegetables and toss thoroughly.
