- Take 1 courgette, grated
- Get 50-100 g Parmesan (or any hard cheese)
- Prepare 225 g self raising flour
- Make ready 4 tbsp olive oil
- Make ready 75 g toasted pine nuts (or any nuts)
- Make ready 1 handful chopped spinach
- Get Salt and pepper
Make up the cornbread mix as per the instructions on the pack in a large mixing bowl. Add the milk, chopped courgette, grated parmesan and chopped garlic cloves to the muffin mix. Place the muffin cases in a muffin tin. Rinse the courgette and ask an adult to cut the ends off, before grating it into a mixing bowl.

- Cook in the oven for about 25 mins until golden brown on the top and a slight squidge when you press them

- You can freeze them for up to 2 months or they will last 2-3 days in an airtight container

Add the courgettes, pine nuts and sultanas, and stir just until evenly distributed. Spoon or scoop the batter into the muffin tin and sprinkle over the rest of the parmesan. In mean time, squeeze water from frozen spinach and chop it roughly.
