- Prepare 500 gms Kathal(jackfruit)
- Make ready 1 Medium onion, finely chopped
- Take 2 Medium tomatoes (1 deshi and 1 apple tomato), chopped
- Prepare 1 Green chilli, chopped
- Make ready 1 tsp Ginger, grated
- Take 1/2 tsp Garlic, grated
- Take 1 Bay leaf
- Prepare 1/3 tsp Panch phoran
- Make ready 1 tsp Coriander powder
- Take 1/2 tsp Cumin powder
- Get 1/2 tsp Kashmiri red chilli powder
- Take 1/3 tsp Turmeric powder

- Make ready 1/2 Black cardamon
- Get 2 Small cardamom
- Make ready 3 Pepper corn
- Take 2 Cloves
- Take 2 tsp Oil

This Kathal Dry Subzi takes a little bit of time to prepare but it is completely worth the effort, because your family will go gaga over it! The first and most critical step in preparing this subzi is to deep-fry the kathal. It is important to fry it really crisp in order to get this masaledar subzi.
Steps to make Kathal masala dry curry:
- Cut the kathal to thin slices (julienne). Cook with turmeric and a little oil, in microwave oven till half cooked. - In a wok heat the oil and ghee. Splutter the ponch phutan. Cook the garam masala in low heat till the aroma comes. Add onion and bay leaf and saute to get a translucent onion.
- Then add ginger, garlic, green chilli, tomatoes and salt. Mix well. Cover and cook in low heat till the tomatoes are soft and mushy and the are separated. - Now add the half cooked kathal, coriander, cumin, red chilli powder 2 tbsp water. Mix well, cover and cook in low flame for 5 minutes.
- The curry is ready to serve. Garnish with coriander leaves.
- Notes:- - - Cooking in microwave oven saves time. - Preparing masala in low flame takes time, but enhance the taste of recipe many fold.
The first and most critical step in preparing this subzi is to deep-fry the kathal. It is important to fry it really crisp in order to get this masaledar subzi. Heat the oil in a kadhai and deep fry the kathal till thye turn light brown form all the sides. Drain on an absorbent paper and keep aside. There are many ways of making kathal or jackfruit.
