  7. Make a well in the middle, turn the heat full for a few seconds and pour the brandy in the middle. Let it boil fast for 2 mins then mix it all together.
  8. Then add the stock and stir and simmer for 5 mins.
  9. It should thicken, add the cream and stir in well. Add the salt & pepper until its hot again. Add to a serving dish and serve immediately.
