I had to tweak the ingredients a bit due to not having everything available, but still turned out delicious! Fiance went back for seconds, so it was a sure hit. For my version, I used ground ginger instead of fresh. Chicken lababdar is a northern Indian curry that is rich and so so good!

  1. Cook rice as instructed on packet
  2. In a blender blend whole chilli, garlic and ginger.
  3. In a large pot heat oil add spices and cook for 2 minutes
  4. Add chicken and dry spices
  5. Next add sliced veg passata puree and water
  6. Bring to a boil them reduce heat and cook for 1 hr
  7. Serve with boiled rice,naan bread and yogurt

For my version, I used ground ginger instead of fresh. Chicken lababdar is a northern Indian curry that is rich and so so good! I have tried a few sweet chicken lababdar recipes that I didn't care for much. This one, taught to me by my friend and chef Vipin VU is a winner. You can always add sugar or jaggery to the sauce if you want a sweeter flavour.
